Okay, not always – but they’re my favorites because they sooo easy, quick, and delicious. Oh, and healthy!

Instructions
  1. Combine all the ingredients in a stand mixer or bowl. Mix until all combined.
  2. Using an ice cream scoop or spoon, drop spoonfuls onto a parchment paper-lined cookie sheet. Refrigerate until cool and firm, at least half an hour.
  3. Try not to peek on them (the hardest part!). They will peel nicely right off the paper. If you don't gobble them all up, store the rest in the fridge.
